Raw Zucchini, Chick Pea and Baby Spinach Salad

Instructions

Grate the zucchini (i only use the outer dark green parts - centres tend to be too watery), mix the rinsed and drained chick peas, the chopped mint and spinach. Season with salt, lemon juice and olive oil. Garnish with grapefruit segments and serve immediately.
