Poached Salmon, Avocado and Dill Salad

Take half the dill, the mint leaves, lemon juice and about 8 tbsp of olive oil and blend together until smooth. In a large bowl, mix the salmon, avocado, grilled zucchini and spinach. Drizzle with the herb oil and mix. Garnish with more fresh dill and serve immediately.
