We love our bread in Malta, normally it’s crusty and simple… and we love that, but this rich and savoury blend of Mediterranean flavours make this roulade incredibly tasty and it’s really not that difficult to make…
Mix the Flour, salt, yeast and sugar together. Make a well in the centre and pour in the water and oil. Bring the dough together, turn onto a clean surface and knead for 10 minutes. Place in a clean bowl, cover and prove for about 11/2 hrs or until it doubles in size.
Remove from bowl, knock back, rest for a few minutes, then open into a rectangle. Spread the pesto, drizzle with olive oil, then place the rest of the ingredients here and there. Roll into a big roulade, cut at intervals (halfway through) attach the edges and form a ring. Place into a round baking dish so it helps the bread to retain it's round shape. Cover and prove for about 40 minutes, then just before baking lightly brush with olive oil, sprinkle with some sesame seeds and place in a hot oven set on 200 degrees Celsius for about 45 minutes to till sounding hollow when tapped.
