Grilled Gozitan Aubergine Rolls


The deep purple colour of the Aubergine is such a lovely shade, the local ones from Gozo have a flavour all of thier own and with the cheese and tomato make a simple, light snack meal anytime of the day…







Grilled Gozitan Aubergine Rolls

First place a slice of grilled aubergine, then layer with Parma ham,  basil leaves, thinly sliced tomato and then mozzarella. Roll and secure with a skewer stick. Serve as an ‘antipasto’ . Also ideal for party food.
