We’re blessed in Malta with over 300 beautiful days of sunshine and if there’s one vegetable that epitomises that sunshine it has to be corn… very simple, very delicious.
Cook the pieces of corn in boiling salted water for about 10 minutes. Drain well. Grill the pieces on a BBQ just briefly. Meanwhile melt the butter and gently cook the garlic. Add the parsley and switch off. Add the hot corn to the butter, toss, season, then sprinkle with breadcrumbs. Toss again and serve hot.
