Blueberry, Oat and Coconut Cupcakes


Everyone loves a cupcake… and with the combination of two superfoods like Blueberries and Oats… what more of a reason do you need?










Blueberry, Oat and Coconut Cupcakes

Sift the flour and baking powder into a large bowl and add the rest of the ingredients. Mix well and set aside.

Make the wet mix

Mix everything together and pour into the dry mix. Fold in until evenly combined.

Add 2 punnets of fresh blueberries, mix and scoop into cupcake cases (in tin) and bake in a hot oven set on 180º (160º fan) for 20-25 minutes.
