Since I’ve started to eat much more fresh local beetroot I’ve had so much more energy… actually my beetroot juice recipe which i have to share one day… is like rocket fuel in the morning… I’m sure beetroot should be classified as a superfood… anyway, for the days I don’t have time to juice this salad does a pretty good job as well.
In a large bowl whisk together the oil, the juice of half a lemon and mustard. Cut the peeled beetroots and toss into the dressing. Season, add the chopped herbs and capers, mix well and serve. Will keep in fridge if you want to prepare ahead.
